This is how food is sometimes cooked in the middle east and India

A tandoor (Persian: تنور, Hindi: तन्दूर, Urdu: تندور) is a cylindrical clay oven used in cooking and baking. The tandoor is used for cooking in India, Turkey, Iran, Pakistan, Afghanistan, the Transcaucasus, the Balkans, the Middle East, Central Asia as well as Burma and Bangladesh.

Tandoor india is a two-restaurant chain in the rochester area. Highly recommended if you like indian food. Get their bread basket and gorge yourself.

For you guys out there thinking about trying it - DON'T just go out any buy any goat - mature billy goats don't make it, take my word on this. Lesson learned may years ago...just saying.

Two of my best friends since childhood are indian. Grew up eating indian food, I love it. One of them has a tandoori oven next to the grill in the back yard . Thats the way to roll.
