I Wouldnt do it to a load bearing wall the door would have a king and jack stud plus a header. My original idea was to modify a pocket door but a 2x4 wall would not be wide enough. I could create a pocket in the frame by using 1x that would give me 2 inch wide space to work with. Hinge the bottom of the door jamb and use a universal hood latch for a car to hold and release the board on top.

EDT: On a semi -serious note, if you plan on stuffing an AR/AK format rifle in there, you're going to need to plan on about an extra foot or so of depth on the header as a normal interior wall is usually a 2x4 (nominal) sandwiched by drywall, so you only have 3-1/2 inches of interior space to play with. to keep as much of that as possible, I'd use 1/4 ply or luan as the box . just saying...
