I recently made pork boneless country style ribs in a crock pot that were phenomenal. I rubbed them with a dry rub, rough chopped some carrots onions and celery plus some broth (chicken or beef, 1-2 cups) and put it all in the crockpot on low for 8 hours. Make the pieces of vegetable large enough to fish out at the end. take out the meat and shred, top with your favorite barbecue sauce. I think this would work with venison because it is basically a braise, so it won't dry out. I don't have any venison ribs like this so I can't try it first for you. I do have a venison and a beef roast separately marinating for a week to make sauerbraten. I'm really looking forward to eating that.
