As title states, I'm wondering exactly how that would work. My roommate is trying to sell guys R 783 but the gentleman buying it is only available Monday but he's not. Could I bring the rifle in and sell it on his behalf with some proof or does the actual seller need to be there?

If you take it anywhere without doing an FFL transfer, you run the risk of getting your roommate into trouble.
If you sell it without an FFL transfer, you could be getting into trouble.
Talk to the FFL you were going to use. You may be able to drop it off like a consignment, and have them run the check, and hand over the rifle for you.

Sell it to the ffl for $0.00 and then sell it to the new owner for $0.00. The new owner would give you the money. There's no reason you can't borrow or shoot a friends gun though. Selling it on his behalf I'm not sure on the legality of that.

I would think that he could be seen as a delivery service. not like he's seeing any of the money for the gun back.
I'm assuming you are doing transfer through FFL who will run NICS on buyer. Don't believe owner needs to be there but FFL would probably want a copy of his DL for his records. Best to ask FFL what he requires.

Folks sell guns on consignment every day through an FFL ... This is no different. The owner takes the gun to the FFL and buyer gets there when he can to make the purchase . ... And everything is done nice and legal ....

Yes you can. Meet at an FFL and you're all set. No different than if it were your gun.
