Staying calm I feel like is what paid off here.
Things might have been different if that other customer was still there and panic'd or the cashier did something stupid.
They did a lot of things correctly, except the threat was still reaching for his weapon.

Notice how the guys that had their hands on their heads, initially, feigned submission while getting additional distance between themselves and the bad guy? Nice work. Once the bad guy dropped his gun, all the good guys had barrels on target.
