Canning. Any Canners out there?

walking around the grocery store today .. ohhh pepperoni on sale .. 3 packs for 10 so I save a bit of $$ ..

then i got thinking .. these packs of pepperoni are on the shelf with no refrigeration and lot of air in the pack too ..

expiration date is only like 3 months from now ..

So i spent 16.99 more and got a flat of 1/2 pint canning jars ..

worked perfect .. each jar will hold one 6 Oz pack of pepperoni

Also the amount of salt in things like pepperoni are a natural preservative.

I was up at 4 this morning…24 quarts of stewed tomatoes with garlic onions and peppers.
48 pints of a Hungarian hot pepper gardinera mix.
24 pints of cortland apple apple butter.
200 pounds of various taters in the root cellar.
Red,white and blue potatoes.
Do not wash your taters before you store them!
Do not wash your squash before you store them… if they have any blemishes at all I cook and toss them in one of the freezers

Yea, just buy your pepperoni uncut and you can just hang it in the pantry.

The whole point of making those sorts of meats was to preserve them.

Canning jars and lids were hard to find in NY the last few years. Here in TN, stores have pallets of them out this time of year. I'm going to stock up this winter for next seasons garden.

I did a few batches of horseradish pickles. Used the fresh horseradish root, a lot of it in big slices.
Rookie mistake, couldn’t even taste it. Have to use the prepared hr for the heat.
Also the pickle crisp they sell like chev recommended, old school was a grape leaf in the jar but the processed crisper works much better.
Going to do another batch of hr and try Italian pickled eggplant Strips too.

I make some horseradish pickles that will blow the top of your head off…eat one at the legion and you get a free beer.
Horseradish bread and butter pickled eggs are a big seller, much less potent than the pickles.
Makes a nasty fart if someone is up your ass at the checkout

the date on the peperoni bags were good for 6 months not 3 ..

update .. a good idea went bad ..

the jars has fungus growing now ..

i did wash my hands ..
