Im seriously hoping to get canning this fall to avoid so much produce in my freezer. I’m looking to get some ideas and recipes if you all wouldn’t mind sharing.
As of now I get enough tomatoes, raspberries and strawberries to make it through most of not all the winter until now. I’m looking to can some sauce and make some preserves mainly. I’m hoping to grow enough peppers this year to have a longer store of them and my wife and kids want pickles, dill, only dill will do.

Pick up the Ball brand canner and their book, good information on how to avoid botulism.

Raspberry and Strawberry preserves (jellies) are pretty easy. Basically just Sugar, Pectin, a dash of lemon Juice, and fruit for basic and really good jams. I like to toss in a couple jalapenos or a habanero too when I make jam. IF you like spicy food it's killer. No pressure canner needed, boiling is all that's necessary for jam.

Tomatoes are another animal. How to Can Tomatoes I personally wouldn't do tomatoes without a proper pressure canner. A pressure cooker won't do here either, it needs to be a pressure canner if you do this, they aren't interchangeable.

Just get the all American 30 quart pressure canner and thank me later. 14 quarts at a time is the only way to go. Lots of ppl water bath tomato sauce and don’t die … I won’t do it tho.
If you want me to be honest I would take my harvest right freeze drier over canning as long as you feel confident in the grid being available to run it …

Ah yes, Moms' canned peaches, peach jam!!! Loved them as a kid, loved them in my C-Rat's, and still love them today. Actually prefer them over fresh.

Curious as to why not? Great way to preserve with not freezing

I think I would simply prefer fresh meat over canned meat texture wise is all.

I can’t do store bought peaches and I had to remove my peach tree since the tree got bigger than stated and the roots were getting into my sewer. I have no where else to put one and the squirrels got most of the fruit anyway so canning peaches is a priority for me. I’m not sure I’ll get to it this year but for sure next year. There’s a lot going on for me this year be tween my school, my sons school and my wife’s job. Time is not on my side this year.

It is a little different. Hamburg breaks down into smaller pieces which is perfect for me because the wife and kid don’t like chunks. Pork shoulder comes out like pulled pork

I’d be willing to try it but if I remove the veggies and fruits from my upright freezer I’m good and have plenty of space to freeze the meat I need.

Thanks and I think I will buy this canner. I want to do it right as it will be for family and friends and if I killed one I’d feel real bad. Also I’m a food safety guy so kind of tough to not do it right. I’ll err on the side of caution every time.

Dry beans are in the canner. Well the 1st load is. I soaked way to many overnight. Instead of one load now I have 2 loads and extra for dinner tonight.

With a water bath it is yes. Tomato sauce I will bath can, peeled tomatoes pressure only for me.

Any veggies you pickle should be just water bathed. Grow your own dill as well it’s worth it!!

Yes this makes sense. I didn’t even think of that or bring that up because I’m not a pickle fan. My wife and kids will want pickles and in fact I’m growing pickle cukes just for them. Thanks for putting this on my radar.
