Deer Jerky

Any one have a good recipe for jerky?
I have two weeks left here to make a bunch up to take back with me.
I,m going to buy a dehydrator tomorrow, all ready bought some jerky making packs to try out.

I,m going to buy a beef roast to make some out of as well.
Then i,'l compare them once done. I,'l do some venison and beef in the same cure so they are compared apples to apples.
Same brine. Same time in the dehydrator. Dried at the same yime, Every thing the same.

I like the smoker better for jerky! There are a 1000 recipes for jerky, first you have to decide if you like sweet, spicy, salty, pepper or a combination of these. You have the time so you can do a bunch of different brines. It's really time consuming, but as you know, well worth it.

I like to use the "football" muscle from the hinge quarters. These are also called the roast. I also make jerky from the corn cut. As far as recipe my best jerky's have been made from packets. I've found the key to it is to take the time and trim the meat to perfection, I prefer a fillet knife. Next use a large sharp knife to make the cuts as even as you can. I think this makes a huge difference. Lastly follow the recipe to the T, again you wouldn't think it would be a huge deal but it seems to make a difference.

I've experimented with doing some with a smoker but the temp control on mine isn't very good. So if I do want to add smoke I will do a few cycles in the smoker then put it in the dehydrator to finish it.

Lastly I like to set the time in the dehydrator to the earliest time called out. Then I will rotate the trays and remove any done pieces. Then I will go for an hour and then rotated and pull the done pieces. I repeat this until it's all done.

If you are doing muscle meat then try and slice even before marinating and dehydrating. I did that route for yeeears before I bought a "shooter" and use ground meat now and it is way easier/faster. More uniform and even pieces.
There are a million recipes depending on your preference.
