You can use as much as you want, but i usually just do 1 sprig per steak. (walmart rosemary sprigs are usually 4 to 5 inches long)Rosemary Steak is on the menu boys!

When you go to buy the rosemary, look for really bright green leaf's on the twigs. If they`ve been on the shelf to long, they`ll be really dark in color.
I pull the leaf`s off the twig. I put the rosemary leaf`s in a cup with a half stick of butter (this will do 2 steaks easily), then melt the butter down in a microwave oven. Don`t leave it in the microwave very long, just a few seconds to melt the butter, it melts very quick. Take it out once its all melted really good, stir really good so that the rosemary has a chance to infuse with the butter. Once your steaks are done, pour that butter an rosemary on the steaks, brush it around really good, salt an pepper to taste, and enjoy.
I do mine with this (melt -n-serve) method because my wife doesn`t want butter spattering all over the place if done with the steaks in the frying pan.
