A few points...
1) the "avian flu virus" is not killing the majority of chickens - it's .Gov directed culling of whole flocks.
2) Why are they ordering culling? - Because supposedly the "avian flu virus" has been detected in a flock.
3) What is one method by which the avian flu virus can be detected?
4) My, oh my it's an RT-PCR method (Highly Pathogenic Avian Influenza – RT-PCR Diagnostics).
5) That sounds familiar???!!!
6) That's it!!!!! RT-PCR is the same technology used to detect SARS-CoV-2 (COVID) in people.
7) RT-PCR has been shown over the last 3 years to be completely worthless for detection of viruses in clinical samples.
8) So, it's like the "inventor" of PCR - Kary Mullis - said, PCR was never intended, nor should it be used, as a diagnostic for viral diseases.
9) Who pushed RT-PCR for COVID - the evil bridge troll FauXi. Who did Mullis positively despise...yeah, Anthony "The Science" FauXi.

So, why all the fires at egg plants? Because less and less people are believing anything fUSA.Gov says. A fire can be seen and easily understood by the average person - bogus RT-PCR "results" to "detect cases" can not be easily "seen" or understood, nor are the results "published".

I’d hazard a guess that birds with avian flu taste the same as birds without, when barbecued, roasted or boiled. But, poultry being one of the least expensive non plant proteins, needs to be curtailed. We can’t have the plebeians eating meats, remember?
Oh and on the egg note, ducks are prolific layers albeit sloppy, and taste very good barbecued as well. Years back, but still within my lifetime, my family on LI had several duck farms (sadly liquidated to real estate developers well before LI real estate hit the stratosphere).

I've been testing making baked goods with different egg substitutions in case of an issue. So far I've found that apple sauce, greek yogurt, and buttermilk seems to be the trick.
I mean you aren't going to make scrambled eggs that way, but if you need to bake something, it'll work to get good food on the table.

What method are you using to store them?
We definitely took eggs for granted in my house. The chickens are about 3 years old now and not producing as much. I can't tell you how many eggs I have just thrown at things to get rid of them. Yeah, I probably could actually. ~6000 would be my guess.

Fresh eggs last for quite a while without refrigeration if you don't wash them. I can't remember the last time we had eggs in the fridge. They just sit on the counter. I would start preserving them, but I think I will always have chickens. We don't eat many eggs either.
This country doesn't have an egg shortage. Grocery stores have the egg shortage. Towns and villages will see this as a perfect time to push more restrictions on backyard chickens.

We were getting overwhelmed by the eggs from our birds. We couldn’t keep up with them. So we have gotten into a rhythm of freeze drying a large batch every 4 months or so. They keep for about 10 years that way and taste indistinguishable from fresh scrambled or omeletteized (that should be a word)
It is difficult if not impossible to see this development as anything other than the continued biowarfare against the American people as vectoring in on the food supply for a designed food crisis.

We purchased a freeze dryer from harvest right a couple years ago. Pretty much been using it since we purchased it. Coupled with a chamber vacuum sealer for sealing Mylar bags for storage.

Probably not American eggs.
FDA requires them to be washed, which drastically reduces their shelf life. That's why they need to be refrigerated.
Once they are washed the cats out of the bag and it's too late for the waterglass.
European store bought eggs would probably be fine.

How about this? Commodity traders realized they could make a killing if they could run the price of eggs up. A few meeting and a few phone calls to willing accomplices and Boom, chickens stop laying eggs. Futures contracts make someone a pile of money. Its just a thought, and given the degree of scandals we are seeing unforld all around us these days, it seems totally plausible to me.
