Having celiac myself, actual mres aren't an option.
What you can sub is beef jerky, protein bars, dried fruit, etc.

Gluten effects all, you just do not know it. Its source is in foods that should not be eaten and if you clear your diet from all of this, some afflictions would go away. They are not noticeable until past 50 anyways so you youngsters cannot know. Compare this to stop using alcohol, smoking, drugs, caffeine as no one want to give up an addiction, so what you get is what you get. Most call it age related unexplainable decline and leave themselves in an easy chair and the TV for "I'm enjoying myself, stop bothering me attitude".

So I did find some GF MRE’s at this company. I sent them a email about they they confirmed they will special make them put they wait until they have enough orders. So a few extra weeks is needed. Their prices are good for what is included with each meal but the shipping is $35 per case (12 meals) and no price breaks for multiple cases

Is your objective to be mobile or stay put and wait things out? That would affect size of items purchased.

I understand that. You're a good man. Concept is will you be bugging out of which lightweight food will be more important or will you stay put of which extra weight and bulk won't cause too many problems? Some potentially gluten free food may come in #10 tins, not practical for hikers.
