Assimilation literally means combining the best aspects of the imported cultures.
Nobody is complaining about Mexicans trying to take over with taco Tuesday.
In fact, Mexicans are assimilating quite well. As the Irish, Italians, Germans, etc... have before them.
They are adding distinctive positive elements of their culture the larger America culture, and they are adopting elements of our culture. In a few decades they will be as fully assimilated as the other groups I listed above.
But, we do have a maximum rate that we can accommodate that.
And there are some other cultures that absolutely refuse to assimilate.
Why would they think it's OK to move here and not assimilate ?

There’s some farming communities around me that when the migrants come in they see a huge boom and love it. A few families have created wonderful little restaurants and other businesses that are driven by their culture. People in the community love it and I’m sure the Mexican family loves it too. The food at the restaurant is wonderful, service is great and it’s reasonable. Place is packed all the time and growing
