It's a viscous water soluble lubricant. Some oil based lubricants are not desirable in that they degrade the seals. KY is also a water based lubricant, unfortunately the federal inspectors would end up licking the doors.

It's also one that everyone is comfortable being around their food.

Don't underestimate the value in that.

Even if you produced an "industrial o-ring lubricant" using the exact same ingredients, it would make people nervous in ways that grandma's dish soap just doesn't.
