I have two litters of New Zealand/Rex cross rabbits that are ready to butcher this weekend.
What's you favorite rabbit recipe?

I like them done with Shake N Bake in the oven.
Simmered in spaghetti sauce.
In stew.

looking for other ways to use it up.

I have a New Zealand doe that was bred with a New Zealand buck that should be having her litter this weekend, so I should have more to butcher in a couple of months. I'll be keeping one buck from this litter to use as a breeding buck instead of the rex buck I have.

my uncle used to raise rabbits and would can them like you would do veggies .. i was a small teen at the time .. omg that was like having a desert

Back when we use to kill a massive amount of wild rabbits, we started making sausage with them. I wish I still had the recipe, but the addition of the fat to the lean rabbit meat made the meat delicious.

I'm still flying the white homers for weddings, funerals & memorials. I have a four bird Trinity fly to do Sunday morning for a baptism ($275).

I think I might buy a regular squabbing breed the use for that purpose, older breeding pairs can be bought pretty cheap.

I cooked my rabbit in a pan with oil, browned some onions, potatoes, and added cooked bacon. It was fantastic. Salt peper, oregano, and a bit of rosemary to season. My sons jonesing for some more this year. Oh and we have 5 pet rabbits.

Put olive oil in a pan. Brown the rabbit on both sides. Take out rabbit. Add 3 sliced medium onions and 3 garlic cloves to sweat. Add 2-3 large cans of whole tomatoes and 20-30 green olives. Add rabbit. Cook for 3 hours on very low heat. You need a load of crusty bread or penne pasta to accompany said rabbit.

I like the looks of Karps rabbit, one of these will end up in that concoction. the 5 year old grand daughter loves olives. Do you drain the liquid off the cans of tomatoes? It would be kind of runny if you didn't, unless it simmers off.

I'll be marinating a couple in Zesty Italian Dressing & cook them up over charcoal.

A few will be used for rabbit, pot pie.
Rabbit & dumplings.
De-bone some, fry it up and put it in Frank's Hot with jalapeno & hubanero peppers added for extra heat.


Palmetto Pigeon Plant in Sumter South Carolina sells breeding pairs of squabbing pigeons. A six by eight foot shed would be more then big enough for ten to twelve pairs of squabbing pigeons.
But that's a whole nother ball game.

My wife works for a rabbit rescue enough said. I'd do it, but she won't. So I just hike I. The woods and shoot rabbits when I get the chance.

If I worked at a rabbit rescue My food bill would be reduced on meat protein.
I don't see many wild rabbits here in Western Washington, now the eastern side of Washington State has an over abundance of them (cottontails) and they also have jack rabbits, but it's is about a two & a half hour drive. That's the main reason I got in to these rabbits.

Thats how my family used to cook them,put meat (even add squirrel/grouse for pot luck) in a crock pot with spaghetti sauce and serve it over spaghetti.Dont remember if it was/how deboned first or not but it was delicious when I was a kid starting to hunt.I dont small game hunt now and dont even have an appetite for them anymore,but it does sound good.

Your avatar reminds me of one of my shooting trips up in the mountains with my six year old grandson. Where I shoot it way back in the Cascade mountains, on the way in the woods on the BLM logging road my grandson asked if Bigfoot was real, i told him YES,
Then he asked if cougars are real, I told him Yes,
Then he asked if the grizzley bears are real, I told him YES,
Then he asked if Unicorns are real, I told him I don't think so,
Then he asked if Santa Clause was real, I told him YES, He sprang right back with "I KNEW HE WAS REAL!"

It's great being on the top of the food chain. At least we have choices of what we put in our mouth.

Some guy's are lucky, they get a little squirt in the mouth and instant protein.

i'll stick with home raised rabbits and maybe next year fresh squab.

Where I hunt is over run with them at this point. Tons of grousse too. My wife would kill me if I ate her pets so it's not worth it to me.
