From usda and FDA approved cutting and processing equipment, sanitation protocol, packing regulation, weights and measure regulations, sales tax regulations, fair marketing regulations, vaccination regulations(even for organic produce).........and a bunch more.
Then if you employ anyone, a whole other list of regulations.
