Venison sausage recipe's

Right now, after many so-so's and utter failures, I am looking for a tried and true breakfast sausage recipe.
Heck, any venison sausage recipe, Italian, German, whatever would be welcome!!! I like good sausage and am willing to try almost any new recipe that sounds promising.

I just use a basic hot Italian sausage recipe. I don’t add pork. I haven’t made any in a few years. I’ll look for my recipe when I get home.

sausage is good because of two things!
Fat and Salt
venison has little fat so you need to add it.
The best deer sausage i ever ate had beef and duck fat added!

Nothing in the world that can't be improved with the addition of duck fat.

Ask the butcher for pork fat trimmings. I got about 4 lbs of pork fat for $1 last year at my local grocery store.
