They'll need the pistol grips removed or replaced with a different stock conversion. All goofy ugly complaint stocks must be fixed and without a pistol grip. Magazines must be kept at 10 rounds max. Some people in California have modified a fixed magazine that can be fed externally through a slot that's cut out or something similar. Your final option is to keep all features, but switch to a bolt action setup by modifying the bolt or something else. The vz 58 rifles are probably the best option. They can be loaded with stripper clips from the top and look good and should still be fairly practical and fun to own/shoot.

So it's not like an ar15 where i can just pin the magazine?

if you have the chance to actually look at an AK (and well tech. you will not be owning any AK-47 in NY) and see how its operated you will see pinning it isnt anything like an AR, you would have to pop off the dust cover, remover the recoil spring and bolt and what not just to load it.. do able but not really the safest or practical thing to do

if you take the brake off you would still have threads on the barrel, have to fuck those up or cut them (if its over 16in)

Best method is to have the manufacturer just use a threadless barrel, along with a spur grip and have them make sure the bayonet lugs are removed before shipping. That should check off all your boxes, assuming you're using standard wooden furniture.
