You don't pull out your gun that early. It needs to be a moment in which you have an advantage or time to draw. Something like:
1) Take out your wallet.
2) Fumble and drop it, and back away.
3) When the guy goes to pick it up, draw on him while he's distracted and you have some distance / he's not able to react as fast.
If you don't have a good opportunity to draw, then you create one -- or just don't draw to escalate.
