If we continue this scam of tipping, all we do is let the owners off the hook. They should be paying these employees, not you and I.
America's tipping system -- practiced here, and pretty much nowhere else -- is no bueno for customers & servers, but it helps restaurants run low overhead. The cultural practice of tipping allows restaurant owners to unfairly transfer risk to the servers, because they make their money (on the bill) without paying their workforce a real wage. That part is up to the customer's subjective assessment of the server's performance.
Fuck it, this has convinced me to stop tipping all together.

You have a choices to make:
1. Don't eat out. After all, the rest of us are apparently taking up the slack for you.
2. Insist on changing the system so that servers, bus boys, and hostesses are all paid the ever-increasing minimum wage. Then...do not complain when the price of the food is increased in order to cover the labor costs of YOUR insistence on raising labor rates.
3. Continue to pay lip service to the issue and screwing the people who are working for you in restaurants.
When I waited tables (for several summers), I would have considered you to have been, at best, "a verbal tip." You'd be the kind of person that says, "Good job..." and then left nothing significant on the table.
If you are already willing to pay a higher price for the food, which you must be since you are insistent that restaurant labor costs be increased, then why not just leave the money as a tip for the server (if they did their job properly)?
Keep in mind, few people will really be willing to wait tables for minimum wage. The job sucks. Waiters have to deal with all kinds of assholes on a regular basis. They run their asses off, if they're good, for the entire shift.
Therefore, if you want most food in our state to be commensurate with the prices charged in Manhattan (and in Europe), then stand firm in insisting on raising wages for waiters and eliminate tipping. If you continue to stiff waiters that are not paid well (aside from tips), and you know that your "principled stand" puts no money in their pockets, then you're just selfish.
BTW - I did chase down a few poor tippers (right into the mall where the restaurant was). I never expected them to give me any additional money. But, I took some satisfaction in embarrassing them in front of those around them. Sure, I had to take the management's admonition when some of the people subsequently complained. But, I was one of the better waiters and they didn't want to lose me in peak season.

I'm a generous tipper, but deductions start as soon as I am seated. Women, especially attractive ones will get extra credit.
These people that do this job do work for tips, I'll take care of them as long as they give me great service. Act like a ditz and I start subtracting. Keep the vino coming until I say stop. I know they have several other tables to take care of but I want to be treated like I am your only table, the good ones know how to do this for every table they're working, I like that, you will get credit from me. Smile and make it a pleasant dinner experience, nobody wants a cranky wench.
