I'd recommend the Swiss K31 straight pull bolt gun.
The Swiss GP11 surplus has been scarce lately (even before the current panic) but it was produced in mass into the 90s and the Swiss periodically make a batch for service match use.
A K31 shooting GP11 service ammunition is almost a match gun interms of accuracy. Very high quality rilfe. The ammo would eventually comenaround again at some point I'd imagine. Till then there is Prvi Partisan and handloads.

@philip444, since you have some semi autos already I think you should go the bolt action route. Milsurp battle rifle ammo is largely dried up unfortunately but if you have the money a Springfield 1903 uses the same 30-06 your Garand does or a Spanish FR-8 in 7.62x51 would also be good. 30-40 Krag is not particularly common anymore but people seem to love the old Krag Jorgensen rifles.

Lee Enfields are still reasonable - No.4 Mk.1 If you can find an Ishapore 2a or 2a1 you can shoot .308/7.62. Some of the non german Mausers are still relatively affordable. I think that Mosins are overpriced for what they are at this point. Another good one is 1917 Enfield, shoots the same 30.06 as your Garand.

I'm old enough to remember seeing wooden barrels of Mil-surp's at Woolworths and other stores starting at $19.95, yeah I know I'm an old fart and I think the prices that we see for them today are stupidly high! But then again there kinda like dirt they just aint making it any more. Shop around and buy what and when you can, original is best but getting harder by the day to find. A nicely done sporter can also be a good investment and fun to shoot.

@BDinPutnam Unless it's a super hot loading I think you would be GTG. My research into Ishapore 2A/2A1 says that the heat treating process used was superior to the original SMLE and No.4 rifles. These rifles were built for .308 to fill the gap in supply of FN FAL production. I haven't had any issues with standard 7.62x51 ammo. The only issue is the magazine is 12 rounds but can be blocked to 10 or you can just not care and run it as is.
