The polish butcher we used was a one of our hunting buddies,he was a good teacher.When he retired his brother took over the business and wouldnt take deer in the shop any more.Was worried about dept of health issues.It turned out to be easier to do it ourselves.We would have to bring the deer back to Bklyn,bring it to the butcher shop in the middle of the night,sometimes have to hang it in one of our yards for a day or two til he could take it from us.When we started doing it ourselves,we would hang em for a couple days at the house we stayed at,the last day we would butcher em up,and just pack it in coolers right home to the freezer.

We would cut them up few times at friends camp with beers weekend party. Cut out back straps, the tenderloins, then hind quarters separate the balls of meat sections from quarters make chops..., Then old wild Bill would throw back straps on gas grill outside, he always would push his finger in palm of hand then meat to check them? no idea WTF that was for LOL,, Big drunk mess next day LOL. But the Venison that goes in my freezer is by my butcher !!!! LOL not camp drunk week venison LOL

Its a test for doneness.You press your index,middle and ring fingers into the fleshy part of your hand below the thumb,one at a time.You will feel the muscle in your hand tense up to a different level with each finger,tensest is well done,middle is med rare,softest is rare.You then compare to the feel of the meat.

I’m the same. I only get steaks from really good steak houses. Rarely buy them from super market anymore, maybe 2-3 times a year. I’ll give in on burgers, but even that is becoming few and far between.

I got 3 deer this year so I am well stocked for awhile.

Years back, raise a few pigs, When we got them from the farmer he asked if we wanted boars or sows? I asked what the difference? He said you would need to castrate the boar or the meat would be very strong tasting! We took sows!

Called boar taint. If a boar isn’t castrated by a certain age the hormones will taint the meat making it undesirable for even sausage. We cut them anywhere from a few days to a few weeks of age.

One in my party did, a .500 revolver. I don’t have anything big enough to trust with the job. I set up my KS-47 just for this. Has a nice red dot on it for quick, close shots.

Do it. Any handgun caliber from .38 Special and above will penetrate both sides on a broadside shot with a hard cast or flat point FMJ.
