The polish butcher we used was a one of our hunting buddies,he was a good teacher.When he retired his brother took over the business and wouldnt take deer in the shop any more.Was worried about dept of health issues.It turned out to be easier to do it ourselves.We would have to bring the deer back to Bklyn,bring it to the butcher shop in the middle of the night,sometimes have to hang it in one of our yards for a day or two til he could take it from us.When we started doing it ourselves,we would hang em for a couple days at the house we stayed at,the last day we would butcher em up,and just pack it in coolers right home to the freezer.Maybe your just better at cutting up your deer than we are... I suck at it LOL...
