I do not prefer one over the other. I enjoy the looks of both.
The Stainless though, I love to polish them and get them gleaming. I use one of my Stainless 1911's as my BBQ/Picnic gun. I wear it in an open bottom holster so the shine can be seen a mile away. Great way to open up conversations about guns.
My stainless gun is home made and I painted it black. It too is a great conversation starter at our outdoor parties, a conversation stopper too, Hah!

I dont like blued. Coated or stainless or I wont buy it. I hate rust and I hate oily fingerprints. And I hate having to wipe gun constantly.

I believe if they had Cerakote or Duracoat back in the day, they would have done away with bluing immediately.Bluing is classic, and what your gun is supposed to look like.
Ion bond or other modern coatings are excellent options as well, but the stainless look is just not for me.
Maybe maybe not. Bluing is actually a form of rust (oxidation) to prevent another form of rust. Because bluing happens at the very surface of the piece it doesn't mess with the tolerances of other pieces it interacts with. Think of how important this would be when trying to pump out as many units as possible in a time of war. Bluing is fully capable as long as it was done correctly and doesn't come off the piece. I don't know of any finishes that wont come off under the right conditions. The quality and durability of finishes obviously vary but again they can all come off. If you want something truly superior to a particular finish then you have to actually make the entire piece out of a durable/resistant metal like SS, Al, Ti etc.I believe if they had Cerakote or Duracoat back in the day, they would have done away with bluing immediately.

I have both & maintain them the same way (blued or s/s) .
S/s is better weather resistance, easier to maintain. But it's not rust proof...
