So I always keep the heart if no damage, But today for first time EVER I kept the liver to try. I was told to skin it? All I found was this on doing it. Who has kept liver and cut it up?

Ive ate it before but its not that great so I leave it now. And yes, peel the skin off.
If I was starving Id eat it but its like goat or sheep liver, very metalic tasting and gamey.

Yes regular Beef liver is a bitch unless part frozen to slice, handle, etc...My brother partially freezes it then thin slices it, grills it. Nothing like fire and meat.

I never understood the liver. It filters out toxins in the body so lets eat it?? No thanks.
My Dad likes pork kidney, smells as bad as liver when he cooks it. He says you just have to cook the piss out of it, not for me.Definitely try it, many people I know love it, thr Kidneys too. Its just not for me.
