Except Isreal hasn't taken hostages. They aren't civilian prisoners. They're closer to POWs, or "enemy combatants".

The Geneva Conventions would call them non-uniformed combatants, and afford them no protection at all.

The hostages that Hamas took really are hostages. They were peaceful civilians before being abducted from their homes or a music festival.

It seems to me that Israel reported anyone for whom a body was not found as "missing" and possibly a hostage.

Hamas carted bodies of victims back to Gaza to desecrate them. Do we know the totality of those?

By reports, Hamas threw thermobaric grenades into "safe rooms." What's left of people after that? Is there even enough left for investigators to realize that people were incinerated?
