It was the main. I’m not a huge eggplant fan either but fresh from garden, breaded and fried with tomato and mozzarella... so good.

Crazy question, is there anything I could plant from seeds now that would give me a viable harvest for the homestead or is it already a lost cause at this time of the year? I have no greenhouse but a south facing front house with plenty of windows.

You could do some garlic, I think some onions over winter and might be able to get away with some carrots that have quick turn around. Some mature in 60 days but I think we’re going to have an early winter so play it safe.

Well we tried our hand at this recipe this weekend. It turned out well, had to mess with the quantities because we didn't have enough tomatoes. I also think the tomatoes were our biggest hold up. I found it to be a huge pain to get the guts out after peeling. I think there's probably a better way.Here's the link to recipe. Here's the ingredient list and how we kicked it up a notch. We doubled the recipe as well. If you like it spicy I'd do more cups hot pepper and fewer sweet. Ours has a little bite but not too hot as we will give some as gifts and not everyone loves spicy. Oh, you'll need a big pot!
Edit -makes approximately 16-18 16 oz jars.
Ingredients
- 10 cups peeled cored diced paste tomatoes (about 30-35)
- 6 cups diced peppers mixture of mild and hot about 5 large green peppers and 6-8 hot peppers
- 4 cups chopped onions about 6 medium onions
- 3 cloves garlic peeled
- 2 Tablespoons finely chopped cilantro
- 1 Tablespoon salt
- ½ teaspoon black pepper
- 1 cup distilled white vinegar
Ingredients

- 8 cups sweet peppers diced, 4 cups hot peppers diced
- 8 cups chopped onions
- 14 cloves garlic peeled
- 3 - 4 cups finely chopped cilantro

- 1 cup distilled white vinegar, 1 cup apple cider vinegar
- 3 6-ounce cans tomato paste
Agreed. We made another batch yesterday and coring the tomatoes takes forever. If you find a better way let me know.

For future reference San Marzano tomatoes have very little seed , thats why they are preferred to other tomatoes for sauce. In addition to there superior flavor. They also make For an outstanding salsa and Bruschetta tomato.

That really sucks about the Apricot tree. They used to do really well in our respective growing zones. Damn dude. I wouldn’t have ripped out a perfectly healthy cherry tree though.
I’m with you on the Hydrangeas, my wife planted three of the blue Variety and they are gorgeous.

Roma is another excellent flavored tomato for sauce , salsas and such,but yes, they are quite a bit seedier and more time consuming. I still wouldn’t hesitate to grow them though.

The cherry tree was healthy it just looked really bad in that spot, it got larger than it was supposed to get, and it bloomed too early. I got flowers every year and tons of them but I would only get about 4-8 cherries. I would always get a frost that killed 99% of the buds and the cherries would just drop off one by one. I’m thinking of getting another one, planting it in the middle and getting one that blooms later. Cornell University developed one that blooms much later I guess. Sweet cherries bloom earlier and sours bloom later for whatever reason.
We did primarily Roma's. We really like them but that doesn't mean we can't try something new.
@Calculon I saw a video after my struggles where a guy after blanching and skin removal, he halved the tomatoes. Then used a spoon to scrape the guts out. It looked smoother than what I did, but I didn't try it.

How about a grapefruit spoon (serrations along the leading edge)?
The GF has been growing Opalka tomatoes for several years now for her sauces n such. Very prolific with 3x6"+ fruits. Very meaty with very good flavour. She also grew some Amish paste and they were god as well
We will probably end up tossing a bunch as she has so many tomato products canned now.

And just like that it’s over... might scrounge a few from underneath but the days of 50-80 boxes a day are over. My Hail Mary planting got cooked too, it was about 5 days from first picking, but that’s the way it goes some years.I wanted to hit 5000 cases this season but fell short from this early frost. Oh well there’s always next year maybe I shoot for 6000

Tossing tomatoes away?!?!? That’s sacrilege. We just made a couple of gallons of chili sauce with all our extra tomatoes. The Mrs. found an old family chili sauce recipe she forgot she had.
I forgot all about he Amish paste tomato. That’s another excellent variety. I am not familiar with Opalka tomatoes. I’ll have to look into those. Does she save seeds every year or source them locally?

She quite often buys a bunch of seeds from Fedco seeds out of Maine. A neighbor/friend down the road used to work at Cornell so she got hooked up with them that way. They generally get a group discount. She also sources from other outlets as well.
We emptied the plants out side of all the fruit that was usable. Just a few small green ones hanging now among the frost burnt vines

I sadly only grew two out of those three.

I rented a bobcat this weekend and moved 10 yards of topsoil for me, 10 yards of topsoil for a friend, and 4 yards of stone/screetings, made an 11x18 patio for her, made a small pad for the garage and replumbed her sump pump. She paid for the bobcat we split and a while back gave me 450 rounds of 9mm and 840 of .223. Funny part is she thinks that was well worth what I did for her. Back then the ammo was worth about $500 and the bobcat is about $250 of we split it. I don’t have the heart to tell her what I did would cost $3,000 for anyone else.

I grow Mr. Stripey’s every year. It’s one of my favorite heirloom tomatoes too. I grew the Purple Cherokee heirloom tomatoes a couple of times . They are very good as well but my wife didn’t care for them at all. She’s a beefsteak tomato girl so that’s what I grow for her now.
