You don't unstamp documents when they are declassified. The stamp is permanent.
Every document that has ever been declassified probably has some copies kicking around somewhere with the stamp still on them.
That doesn't mean they are still classified.
As POTUS Trump was not required to notify anyone when he declassified a document.
Not only do you not have any proof they weren't declassified, you cannot even in principle prove such a thing.
Trump is not required to prove anything. As the defendant in such a case his lawyers would need to merely claim it happened and then the onus would be on the DOJ to prove it didn't happen, and that is an impossible task.

Trump had 1.5 years to restamp them. He did nothing of the sort.

That was a leak from an unnamed source. No physical evidence has been released to substantiate the claim. With the journalistic standards of today, it is quite possible it never happened and it was made up from thin air.
