Maybe I am missing some hidden sarcasm but these were not "nice guys." And they are not hunters, they are poachers.I found 2 hunters sleeping in the cabin at 9:30 am.
They were nice guys and did not cause any damage but they were trespassing, breaking and entering and commiting larceny.....they used my wood and ate 2 cans of chili.

And it sounds like you just let them go after catching them red-handed, which if so makes you part of the problem. Turn them in (ideal world) or dispense some street justice (poor choice where guns are involved).

Now, none at all.

That's a fair point and a real dilemma. Truth is any law enforcement can come poke around on your property to "investigate" for no reason at all at any time with no report. That can include your sheriff, DEC, state police, town code inspector. It's called the "open fields" doctrine and it's the law of the land. They just can't come into your curtilage (fences around structures).Once you make a report of poaching, they can "investigate" indefinitely.

I still say they're poachers. If land is posted it's illegal to hunt it, in New York, and the right to hunt the deer belongs to you and those you license.
If it wasn't posted then yeah they just broke in your cabin without permission and ate your beans.
That said since they suffered no real consequences it seems likely they are someone else's poaching and trespassing problem now.

The only real limitation is politics and motivation/resources. The sheriff may be your friend and the DEC may be your bugbear, but for someone else it could be the other way around. Some folks don't appreciate any law enforcement ever.

Your property does not need to be posted for someone to be arrested for tresspassing.
The law sees posted and non-posted land the same.
If its not your land and you dont have permission, you are tresspassing.
